Some weeks the enthusiasm to eat healthy is just no there. Well here is my solution to those times, created because I wanted something rich in flavour, to get me out of those post holiday blues. So without further a do, here's my high protein, high fibre, low carb courgetti bolognese recipe - it's so delicious, you don't even realise how healthy it is!

Ingredients
175g Lean Turkey Mince
200g Tinned Chopped Tomatoes
1/5 Red Onion
40g Sweetcorn
1/2 Carrot
40g Kidney Beans
40g Peas
150g Courgetti
1/5 packet Spaghetti Bolognese Seasoning Mix (Try Schwartz, it's a lot lower in sugar than some!)
1 tbsp Tomato Puree
1 tsp Worcestershire Sauce
4 Sprays Low Calorie Coconut Oil
To Season: Pepper & Basil
Recipe
1. Start by preparing all the veg, dicing & chopping where needed. Fry the onion in the coconut oil, on a medium to high heat, for a couple of minutes. Turn down the to medium heat & add the mince.
2. Once the mince has started to cook, some of the seasoning & Worcestershire Sauce. Continue until cooked throughout.
3. Add the tinned tomatoes, tomato puree & rest of the seasoning. Stir & leave to simmer, so that the mince soaks in the flavours.
4. Add all your veg, except the courgetti, stir & continue to simmer for 5 mins.
5. Heat up the courgetti separately, following the instructions on the packet. Add a little pepper & serve the bolognese on top!
Simple, easy & delicious. And a perfect meal to meal prep too. Let me know what you think!
