Pancake day is one of my favourite times of year - it's a great, guilt free excuse to sit around with family & eat tones of pancakes with all types of toppings! But this year, I am feeling creative & have decided to explore further than my favourite lemon & sugar topped pancakes. So here are my 7 favourite pancake recipes, for every type of diet...
1. The P R E W O R K O U T Pancake | Banana & Oat Pancake
This carb & protein rich banana & oat pancake is the perfect form of energy to help you excel during your workout.

Calories 568 Carbs 86 Sugars 24 Fat 13 Protein 27
Ingredients
150ml Coconut Milk
50g Oats
1 Eggs
1 Medium Banana
4 Sprays Coconut Oil
Toppings - Cinnamon, 5g Dark Chocolate Drops, 1 tbsp Honey
Method - Slice the banana in a bowl & then warm in the microwave, so that it can be easily mashed. Beat the eggs into the banana, then stir in the coconut milk, protein powder & oats gradually or blend together in a mixer if you want a smoother pancake consistency - you may find you need more or less milk to get the desired consistency. Mix thoroughly. Spray a frying pan with the coconut oil, heat the oil on the hob, then pour in the desired amount of mixture for your pancake. Fry on both sides, until golden.
2. The P R O T E I N Pancake | Peanut Butter & Banana Pancake
We all know the importance of protein post workout, but these pancakes are also going to refuel your energy levels, as well as your muscles!

Ingredients
1/2 Medium Banana
1 Eggs
100ml Almond Milk
20g Peanut Butter
10g Raisins
4 Sprays Coconut Oil
Toppings - Cinnamon, 1 tbsp Honey
Method - Slice the banana in a bowl, add the peanut butter & then warm in the microwave, so that it can be easily mashed together. Beat the eggs into the mixture, then stir in the almond milk, protein powder & raisins gradually or blend together. Mix thoroughly. Fry the desired amount of mixture in the coconut oil, on both sides, until golden.
3. The L O W C A R B Pancake | Vanilla, Strawberry & Coconut Pancakes
A nutritiously delicious low carb option, with naturally added sweetness.

Ingredients
20g Coconut Flour
100ml Coconut Milk
2 Eggs
10g Butter
1/2 tsp Baking Powder
1/2 tsp Vanilla Extract
40g Chopped Strawberries
4 Sprays Coconut Oil
Toppings - 40g Strawberries, 5g Coconut Shavings, 10g Honey
Method - Put the butter in a bowl & microwave until melted. Beat the eggs into the butter, then stir in the rest of the ingredients gradually or blend together, mixing thoroughly. Fry the desired amount of mixture in the coconut oil, on both sides, until golden.
4. The 1 0 0 % C L E A N Pancake | Apple Pie Pancakes
With 100% natural ingredients, this is a deliciously clean, guilt free indulgence, that both your body & taste buds will love.

Ingredients
20g Coconut Flour
1 Egg
100ml Coconut Milk
2 Medium Cooking Apples
15g Raisins
4 Sprays Coconut Oil Spray
Toppings - Cinnamon, 1 tbsp Honey
Method - Peal & dice the apples, place them into a bowl & heat in the microwave, until soft. Put a couple of teaspoons to one side for the topping. Beat the egg into the apple, then stir in the rest of the ingredients gradually or blend together. Mix thoroughly. Fry the desired amount of mixture in the coconut oil, on both sides, until golden.
5. The M A T C H A Pancake | Green Tea & Berries Protein Pancakes
All the benefits of green tea are amplified in this matcha green tea recipe, which is complemented by the natural sweetness of the berry compote.

Ingredients
50g Coconut Flour
150ml Coconut Milk
1 Egg
1 tbsp Matcha
10g Melted Butter
1/2 Tbsp Baking Powder
4 Sprays Coconut Oil
Toppings - 50g Mixed Berries (such as raspberries, strawberries, blackberries, blueberries & currants), Cinnamon, 1 tbsp Honey
Method - Mix the dry ingredients in a bowl, beat the egg into the mixture, then slowly stir in the rest of the ingredients or blend together. Mix thoroughly. Fry the desired amount of mixture in the coconut oil, on both sides, until golden. To make the berry compote to serve on top of the pancakes, heat the berries in a saucepan with about 25ml water, stirring until soft. The cinnamon & honey toppings will then take away some of the berries' sharpness, without adding additional sugar.
6. The G L U T E N / D A I R Y F R E E Pancake | Chocolate Banana Pancakes
A deliciously rich gluten & dairy free alternative to chocolate topped pancakes.

Ingredients
60g Oats
1 Medium Banana
100ml Coconut Milk
2 tbsp Cocoa Powder
1/2 tbsp Vanilla Extract
4 Sprays Coconut Oil
Toppings - Cinnamon, 1 tbsp Honey
Method - Slice the banana in a bowl & warm in the microwave, so that it can be easily mashed. Save some of the banana for the topping. Gradually stir in the rest of the ingredients or blend together. Mix thoroughly. Fry the desired amount of mixture in the coconut oil, on both sides, until golden.
7. The V E G A N Pancake | Blueberry, Lemon & Poppy Seed Pancake
A sweet naturally sweet combination of ingredients - 100% clean & vegan.

(average macros for the whole mixture - serves 3/4 pancakes)
Ingredients
50g Blueberries
60g Oats
1/2 Medium Banana
100ml Almond Milk
1/2 tbsp Poppy Seeds
1 tbspn Lemon Zest
1 tbsp Lemon Juice
4 Sprays Coconut Oil
Toppings - Cinnamon, 1 tbsp Honey
Method - Take 20g of the blueberries to make into a compote for the topping - heat the berries up in a saucepan with about 10ml water, stir until soft. Slice the banana in a bowl & warm in the microwave, so that it can be easily mashed. Gradually stir in the rest of the ingredients, but not the blueberries, or blend together. Fry the desired amount of mixture in the coconut oil, on both sides, until golden, scattering the blueberries onto the pancake when frying, to cook them into the pancake.
And if you're feeling really naughty, here is a bonus recipe...
8. The I N D U L G E N T Pancake | Double Chocolate & Raspberry Pancakes
If you like sweet, then this is the pancake for you. An indulgent treat, for this once a year occasion.
(serves 3/4 pancakes)
Ingredients
1 Egg
150ml Milk
100g Flour
4 tbsp Cocoa Powder
2 tbsp Sugar
1 tbsp Baking Powder
20g Chocolate Chips
4 Sprays Coconut Oil
Toppings - 30g Raspberries & Chocolate Ganache (50ml heavy cream & 50g Chocolate Chips)
Method - Start by making the ganache - heat the heavy cream in a saucepan & remove once it simmers. Pour in the 50g chocolate chips & let it sit for 5 mins. Whisk into a silky smooth ganache. Leave to cool before putting on pancakes. For the pancakes, mix together the egg & sugar, then add milk until thoroughly mixed. Slowly mix in the dry ingredients into the mixture - you may find you need more or less milk to get the desired consistency. Fry the desired amount of mixture in the coconut oil, on both sides, until golden. Serve with the ganache & raspberries on top.
